Bouillabaisse, the world-famous fish stew of the Mediterranean, is generally thought to have originated in southern France in the city of Marseille. But over the years, many small port towns across the coastal regions of Provence have disputed this claim, only adding to the diverse and widely varying versions of this seafood classic.

While there is still no definitive recipe for bouillabaisse, most agree that the classic dish must start with the freshest fish and shellfish pulled from the sea that same day. Some insist that as many as seven types of fish should be used to achieve the proper flavor. Whether it’s traditional rascasse, grondin and congre or other local varieties found along the southern European coastline, this timeless dish offers a truly unique combination of flavor — and a true taste of the sea.
